  • 2 large oranges
  • 6 large eggs
  • 9 oz almond flour
  • 8 oz granulated sugar
  • 1 tsp baking powder
  • 1 tsp lemon zest
  • 1/4 cup all-purpose flour
  • 3 tbsp melted butter

Instructions

  1. Place the oranges in a large saucepan or stockpot.

  2. Cover the oranges with water.

  3. Bring the water to a boil and reduce it to simmer for 1 hour.

  4. Remove the oranges from the pan to cool.

  5. Preheat the oven to 350 degrees Fahrenheit.

  6. Brush a 9-inch springform tin with melted butter; and dust with all-purpose flour.

  7. Chop the cooked oranges and discard any pits and seeds.

  8. Place the chopped oranges and eggs in a food processor and process until combined.

  9. In a large bowl, combine almond flour, sugar, lemon zest, and baking powder.

  10. Then, whisk in the egg-orange mixture until evenly mixed.

  11. Pour the batter into the prepared springform tin.

  12. Bake in the oven for 50 minutes at 350 degrees Fahrenheit.

  13. Let it cool before slicing and serving.
