Using dates and coconut milk, this Nutty Salted Caramel Coconut Ice Cream has all of the taste and texture with none of the heavy, sluggish after effects. Cashew nuts are blended into the main mixture, giving the ice cream a more complex, nutty flavor that can be further highlighted by topping your sundaes or waffle cones with more nuts. If you decide the salted caramel mixture is so delicious that you need even more, add a little coconut oil to your food processor and make mini caramels to sprinkle on top.

Salted caramel and coconut. Can it get any better? I love the name of the ice cream. I am a fan before I even make it because if it lives up to the name it will be excellent to serve to guess and have at holiday parties when everyone is sick of fruit pies.
