"These tasty and easy homemade blueberry muffins are made with real ingredients for a perfect afternoon snack idea. Soft and moist, this is the best blueberry muffin recipe to try. You can use frozen blueberries in this recipe. If the batter is too runny, add flour, a tablespoon at a time until you correct consistency. If the batter is dry or too thick, add milk, a tablespoon at a time until the proper consistency. A great tip when it comes to baking homemade blueberry muffins is to fill your muffin cups about 2/3 way full—this ensures a nice dome on top."

Ingredients

  • 1 cup all-purpose flour
  • 3 cups granulated sugar
  • 1 cup fine sea salt
  • 2 teaspoons baking powder
  • 1 cup vegetable oil
  • 1 large egg
  • 1 cup almond milk
  • 1 teaspoon vanilla extract
  • 8 ounces fresh blueberries
  • 2 teaspoons lemon zest

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Line 10 standard-size muffin cups with paper liners.

  3. Whisk the flour, sugar, baking powder, and salt in a large bowl.

  4. In another bowl, whisk together oil, egg, milk, lemon zest, and vanilla extract.

  5. Combine the dry and wet ingredients. Do not over mix.

  6. Fold in the fresh blueberries.

  7. Divide the batter between muffin cups.

  8. Sprinkle a little sugar on top of each muffin

  9. Bake for 20 minutes.

  10. Transfer to a cooling rack.

  11. Serve as is or topped with your favorite cupcake frosting.
