Wacky Cocoa Cake

Ingredients

  • 3 cups flour
  • 1/2 cup cocoa
  • 1 tsp salt
  • 2 cups sugar
  • 2 tsps baking soda
  • 3/4 cup vegetable oil
  • 2 tsps vanilla
  • 2 Tbsp vinegar

Instructions

Combine flour, cocoa, salt, sugar and soda in a large mixing bowl. Add water, oil, vanilla, and vinegar. Beat 3 minutes at medium speed until thoroughly blended. (I did the mixing by hand). Pour batter into a greased and floured 13 x 9 inch pan. Bake at 350 degrees for 35 to 40 minutes. check for doneness with toothpick. Let cool just a little bit and enjoy.It is great both warm and cold.

If this is the same recipe I used back in 1961, it is very light and full of chocolate flavor. It is a cake you can make with what you always have in your pantry, using no milk or eggs!! Using a lace doily, sprinkle with powdered sugar and you have an easy, non-expensive festive cake! Nancy
