Poor Man Texas Hash

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 small green pepper, diced
  • 1 (14-ounce) can diced tomato (not drained)
  • 1/2 cup uncooked instant rice
  • 1/4 cup water
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 1/8 teaspoon pepper


  1. Preheat oven to 350 degrees F.
  2. Brown ground beef with onion and green pepper. Drain.
  3. Place meat mixture with rest of ingredients in a small casserole. Mix well.
  4. Cover and bake for 1 hour. Easy and very tasty!

You can also take leftover "watery" chili (as my daughter-in-law calls it), add a little more water and regular rice. Cook it in the oven on 350 degrees for 45-min to an hour. Take it out and put the cheese on it (cheddar is what we like best) and put it back in the oven until it melts good.

Can I use regular white rice, or does it need to be instant?

You can use regular rice, but you will have to cook it before you use it in this recipe.

This is a question? there is a ingredient missing between the rice and chili powder. It just says 1/4 cug. could you tell me what that is? Thanks

1/4 cup water

I have been making this recipe for the last 30 years, since my Mom gave it to me on an index card. Only I have to double it because my family loves it leftover and rewarmed the next day or so. It never seems to last long enough though, cause everyone loves it, even my picky eater. Ruthie B.

My Mom used to cook this for us when I was growing up. She also made it for the church potlucks. I've doubled the recipe for leftovers. Everyone really likes it!

I have made this for many years. It's delicious, easy to make, and if you toss a crisp green salad and serve some nice, crusty rolls or even warmed flour tortillas, you'll have a fabulous meal! I originally found this recipe on the back of a Minute Rice box. I was so used to reading the recipe off of the box, they changed the recipes on the box and I was left with no recipe! Happily, I found it again in one of the Junior league cookbooks published in many cities across the U.S. I highly recommend this recipe!
