Ground Beef and Macaroni Casserole

This quick easy casserole recipe is terrific because it combines all of your favorite ingredients in big delicious simple casserole. Plus, this is one of those casserole recipes that freeze well too.

Ingredients

  • 1 cup macaroni
  • 2 onions, chopped
  • 4 stalks celery, sliced
  • 1 red pepper, chopped
  • 2 1/2 tablespoons butter or margarine
  • 1 pound ground beef
  • 1 can condensed mushroom soup
  • 1 can water
  • Salt and pepper
  • 1/2 teaspoon marjoram
  • 2 tablespoons parsley, chopped

Instructions

  1. Cook the macaroni in salted water until just tender.
     
  2. Saute the onions, celery and pepper in the butter or margarine for about 5 minutes. Add the meat and cook for another 5 minutes.
     
  3. Mix in the soup, water, salt and pepper to taste, marjoram and parsley.
     
  4. Put the cooked macaroni in the bottom of a greased casserole dish. Cover with meat mixture. Cover and cook in a 350 degree F oven for about 1 hour.

You know, I'm not a huge fan of ground beef and macaroni casserole. But I guess it's a classic for a reason!

This sounds like a meal that my family would really enjoy. The recipe seems like a stroganoff style pasta casserole. Egg noodles could be substituted for the macaroni. For a healthier version, I would use lean ground beef, and drain it after cooking, before adding the other ingredients. To ensure that the pasta is a good consistency in the casserole, it should be drained before it is done. The pasta will continue to cook in the oven.

The perfect recipe for singles like me. You can make a whole casserole and divide and freeze your leftovers for other meals. Plus, it's really easy, uses basic pantry ingredients and needs almost no prep - maybe 15 minutes? This would also be a great dish for a potluck or to serve at a casual gathering.
