Golden Cheesy Broccoli Casserole

Though it takes just 35 minutes to bake, this broccoli cheese casserole dish packs in a ton of rich and delicious taste. Made with fresh broccoli, cream of mushroom soup, American cheese and crushed crackers for added texture, this is one of those casseroles you'll fall in love with at first bite.

  • 1 1/2 pound fresh broccoli
  • 1 can condensed cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup shredded sharp American cheese (1 ounce)
  • 1 tablespoon chopped pimiento
  • 1 1/2 teaspoon lemon juice
  • 1/3 cup round cheese crackers, crushed (about 8 crackers)


  1. Preheat oven to 350 degrees F.
  2. Cut up broccoli to make about 6 cups.
  3. In saucepan, cook broccoli, uncovered, in small amount of boiling, salted water for 10 to 15 minutes.
  4. Drain well. Turn into a 1 1/2-quart casserole dish.
  5. Mix soup, mayonnaise, cheese, pimiento and lemon juice. Pour over broccoli.
  6. Top with crushed crackers.
  7. Bake uncovered for 35 minutes.
