This is the perfect time for me to find this recipe. I've been watching my zucchini plants and it will be harvest time very soon. This promises to be a delicious snack cake especially with the addition of the chocolate chips. I will use semi-sweet chocolate but I think the mint chocolate would be yummy in this cake too.
