Mama's Mandarin Orange Cake

Mama's Mandarin Orange Cake is like no other cake you've seen before. Mandarin oranges are mixed right into the cake batter, so you'll find them throughout the cake. The frosting is out of this world. It's made with pineapples, vanilla pudding, and Cool Whip - an unusual frosting ingredients list, but one that works well. Ingredients

  • For the Cake:
  • 1 (18.25-ounce) butter recipe cake mix
  • 1/2 cup vegetable oil
  • 1 (15-ounce) can mandarin oranges, undrained & separated
  • 3 eggs
  • For the Frosting:
  • 1 (8-ounce) can crushed pineapple, undrained
  • 1 (3.4-ounce) box vanilla instant pudding mix (or French vanilla)
  • 13 ounces Cool Whip topping, thawed

Instructions

  1. For the Cake:

  2. Preheat oven to 350 degrees F.

  3. Add the cake mix, oil, eggs and mandarin oranges with liquid to a large mixing bowl. Place a few of the mandarin oranges aside for garnish. (about 6-8 segments).

  4. Mix together the cake ingredients using an electric mixer. Pour into two greased and floured round cake pans.

  5. Bake at 350 degrees for 30 minutes until golden brown and the cake springs back. Remove from oven and let cool in pans 10 minutes. Remove from pans and cool completely on a baking rack. Frost when cakes are completely cooled.

  6. For the Frosting:

  7. Prepare the frosting by adding the dry pudding mix and un drained pineapple together and mix with a spoon.

  8. Fold in cool whip until well blended. Frost both layers and sides of cake. Garnish with remaining mandarin orange segments. Keep cake refrigerated before serving.

Just thinking about this cake has my mouth watering and isn't it just the best time of year for this deliciousness too? I love that it's not loaded with tons of sugar like most desserts. Usually, I'll leave the frosting off of my piece of cake because it's just too sweet for me but this frosting with pudding, pineapple, and whipped topping sounds like the perfect balance of flavors to me!

I've never seen a cake with mandarin oranges! I love all these ingredients so much--oranges, pudding, pineapple, and Cool Whip. I know my family will be surprised at this recipe, and we will love this cake.

This is so good, have also made it as a sheet cake and cut that in half since I only have 1 round pan if I want layers.

What size cake mix did you ladies use? I can't find an 18.25 oz. cake mix any more where I live. They're something like 16 oz. now.

I have also made this cake for many years. I make it in three layers also. It is beautiful and omg so good!

I have made this for years also, but I do three layers. delicious cake enjoyed by all.

I have made this cake for years, always a good summer time cake. I also add 1/2 can of the mandarin oranges in the frosting without the liquid.
