George Washington Cake

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 2 cups self-rising flour
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts
  • 4 cups apples, peeled and sliced
  • 6 ounces cream cheese, softened
  • 1/4 cup butter, melted
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Beat eggs until thick and light. Add sugar and oil and beat at medium speed until combined.
     
  3. Mix together cinnamon and flour. Add flour mixture to egg mixture. Mix in vanilla and walnuts.
     
  4. Distribute sliced apples evenly on bottom of long 2 or 3-quart baking dish sprayed with non-stick cooking spray. Pour cake batter evenly over apples, spread to fill the pan, and bake for 45 minutes to 1 hour.
     
  5. For the frosting, beat cream cheese and butter together until fluffy. Add sugar and lemon juice and mix together. Spread over cake once cooled.
