Easy Overnight Coffee Cake

  • 3/4 cup margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1 cup sour cream
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon nutmeg
  • 3/4 cup light brown sugar
  • 1/2 cup chopped pecans
  • 1 teaspoon cinnamon


  1. Cream margarine and sugar until light and fluffy. Add eggs and sour cream; mix well.
  2. Combine flour, baking powder, soda, salt and nutmeg; add to batter and mix well. Pour batter into greased and floured baking pan.
  3. Combine brown sugar, pecans and cinnamon; mix well. Sprinkle one half of this mixture over cake batter; swirl mixture through batter.
  4. Top remaining 1/2 mixture evenly over cake batter. Cover and chill overnight.
  5. When ready to serve, preheat oven to 350 degrees F.
  6. Uncover casserole and and bake for 35-45 minutes or until cakes tests done with toothpick.
  7. Note: Sliced almonds also work great in place of pecans.

What size pan? Why do you call it a casserole? Its a cake!@! This site scares me.


Can a sugar substitute such as Splenda be used?

Would it be possible to include the nutrition facts with the recipes? (carbs, fats, fibre, cal.,etc.)
