Brunch Worthy Crumb Cake is a tasty coffee crumb cake recipe that is easy to make on a lazy weekend morning, but once you make it, it's one you'll crave constantly. The secret ingredient here is pumpkin pie spice, which brings warmth to this cake you will die for and a smell to your kitchen that is unbelievably addicting! All you need is a box of cake mix and a few other common pantry ingredients to whip this delightful crumb cake any morning you choose. Make sure to start brewing a pot of coffee because nothing goes better with coffee cake than a giant cup of Joe!

Ingredients

  • 2 cups flour
  • 1/4 cup sugar
  • 1 cup light brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 2 sticks butter, softened
  • 1 box white cake mix, prepared according to package directions

Instructions

  1. Preheat oven to 350. Spray a 10x15-inch pan with cooking spray and set aside.

  2. For the Topping: In a large bowl combine flour, sugar, brown sugar, salt, pumpkin pie spice, and whisk to combine. Cut in 2 sticks butter until mixture is crumbly.

  3. Prepare cake  mix according to package directions.  Spread cake mix in the prepared pan.  Crumble topping over the batter.

  4. Bake 35 minutes, or until a knife inserted in the center comes out clean.

  5. Cut and serve warm.

This recipe looks so yummy and so simple! I've always wanted to try baking a crumb cake and had no idea it was so easy! The pumpkin pie spice would be super delicious although I'm guessing you could omit that or use other spices such as cinnamon or nutmeg. This cake looks so pretty, it would be great to bring as a hostess gift to a dinner party too. Yum!

I've always wanted to know how to make crumb cake and with pumpkin spice this is going to be amazing. If I knew how to bake a cake from scratch I would definitely have to make this more often than not. Giving this as a gift is also a nice gesture and no doubt will be greatly appreciated. You can even cut it and wrap it into individual pieces to take along as a snack or for lunch.

Wow, this recipe looks so good and it's so simple too. The pumpkin spice will add an amazing flavour to this cake and it's easy enough that kids could help. I usually like to bake from scratch, so I might try making with a baked-from-scratch yellow cake recipe instead. Yummy. This is a lip smacking cake. I can just imagine the smell. What a good idea to make it on a lazy weekend and we have one coming up from Good Friday to Easter Monday. I'm definitely making this over that long weekend. We don't have pumpkin pie spice in South Africa but I will find an alternative. Pumpkin Pie spice sounds so nice. What would be a good alternative to that? Cinnamon?

What a nice recipe for a coffee/crumb cake. I don't like pumpkin pie, but the spice is okay and I think it would be a nice flavoring for a crumb cake. Even though pumpkin pie spice seems like a fall/winter ingredient, I do want to make this soon.
