"Papas a lo Pobre, also known as Andalusian Poor Man's Potatoes, is a simple Spanish style potato side dish consisting of russet potatoes, yellow onion, green bell pepper, and garlic simmered in olive oil then simply seasoned with salt & black pepper. These potatoes go great as a breakfast side dish to accompany eggs or work well as a dinner side also. This recipe serves about 3 people and takes about 30 minutes from start to finish."
