Low Calorie Blender Potato Pancakes
"An easy side dish recipe. Throw uncooked potatoes into a blender with a couple of ingredients and whip up these healthy, low calorie potato pancakes as a side dish for dinner. They are amazingly easy to make, too. You put raw potatoes right into your blender. What a time saver. You don't have to cook the potatoes first. With just a few more ingredients, you are all set. Prep work cannot be more than 5 minutes. She always makes her Blender Potato Pancakes on a big electric griddle. This way you can cook at least 8 to 10 at a time. It helps the cooking time, because this recipe will make approximately 50. The only change I made was to replace all-purpose flour with whole wheat flour.
