Mini Beef Loaves

This image courtesy of

These fabulous little individual meatloaves are extra flavorful because they are made with beef broth and have a secret ingredient that your family won't expect. Little, cute and delicious, do not pass on this wonderful meatloaf recipe.

Preparation Time15 min

Cooking Time30 min

  • 1 can (10.25-ounces) Campbell's beef gravy
  • 1/2 cup Pace Picante Sauce
  • 2 pounds ground beef
  • 2 cups fresh bread crumbs
  • 1 egg beaten
  • 6 cups hot mashed potatoes

  1. Preheat oven to 400 degrees F.

  2. Thoroughly mix 1/4 cup gravy, 1/4 cup picante sauce, beef, bread crumbs and egg in a large bowl. Shape the mixture firmly into 6 loaves and place into a large baking pan.

  3. Bake for 30 minutes or until the meat loaves are cooked through.

  4. Heat the remaining gravy and picante sauce in a 2-quart saucepan over medium-high heat until the mixture is hot and bubbling. Serve the gravy with the meat loaves and potatoes.

Beefy loaves sound so good. Do you add garlic to the mashed potatoes, or do you serve them with just salt and pepper? I like them both ways, but I was thinking that the garlic mashed potatoes would be best with this recipe. How do you feel about using garlic in the potatoes?

Comfort food is popular with families, and meatloaf is always welcome on the dinner table. Since this is a recipe for mini meatloaves, the food will be ready in half the time it takes for a regular meatloaf. When making this, I would use lean ground beef and mild picante sauce. Besides the mashed potatoes, I would serve green beans with the main dish.
