"Hello, summer! Look at those colors pop! I love the variety I have with my summer melon skewers. These are my favorite combo, but based on guests preferences I can mix and match how I like and personalize, which is a guest's dream- being catered to. I skewer my prosciutto in a way that allows guests to enjoy it with every bite, which is always praised. Lately, I've been inspired by the "tajin on mango" craze, and it is tasty. So, my 2017 addition is a touch of cayenne pepper to offer a wonderful surprise bite. Also, if I've run out of white balsamic or it becomes hard to find, it can be swapped for champagne vinegar. Every summer table needs this, and I hope everyone at Recipe Lion enjoys these refreshing sweet and savory appetizers."

Ingredients

  • 1 Honeydew melon
  • 1 Canteloupe
  • 30 mini mozzarella balls
  • 2 3 ounce package sliced prosciutto
  • 1 cup White balsamic
  • 2 tablespoons Honey mustard
  • 1 cup Extra virgin olive oil
  • 1 teaspoon Cayenne papper
  • 1 teaspoon Kosher salt
  • 10 Fresh mint leaves

Instructions:

  1. Slice the melons. Slice the mozzarella balls in half.

  2. Skewer 4 melon slices, 1/2 slice of prosciutto, and 1 whole mozzarella ball (2 halves).

  3. Whisk or blend together the balsamic, honey mustard, olive oil, cayenne pepper, and kosher salt. Roll up the mint. Slice thinly.

  4. Drizzle the skewers when time to serve. Garnish with fresh mint.

I have often had prosciutto with melon but never with mozzarella balls. Wow, what a fabulous flavor combination! Then when adding the honey mustard and the mint it becomes an absolute taste feast. And they look so beautiful too. A very good canap on a hot summers day. They are not difficult to prepare and then you get to sit back and wait for the compliments, lol!

Wow what a recipe. I love it! I love the addition of prosciutto. What an awesome idea. I think the cayenne pepper is a great addition too. I have put that on pineapple before but never melon. I would like to try that. I think the mozzarella is a nice idea but I think I would prefer Danish feta as it's more salty. It's not crumbly either so it should stay on the skewer.
