"Sweet, savory and so good for you, this AIP roasted sweet potato and leeks recipe is definitely one to try. Health Benefits of Leeks Like onions, leeks have a variety of vitamins and nutrients that are essential to good health. Leeks are a great source of vitamin K, which is essential to blood clotting and good bone health. They are also a good source of manganese, copper, vitamin B6, iron, folate and vitamin C. Leeks also contain the lesser-known flavonoid kaempferol, which protects blood vessels. While there hasn’t been a lot of research done on leeks, they likely share a lot of the health benefits of other allium vegetables such as onion and garlic."
