"This is an AMAZING recipe for moist scones! It has now become my baseline for all scones toffee, pecans/cinnamon, etc. Buttermilk and keeping the shapes together are critical. The only steps I've done differently are 1) cutting the dough into 2 for smaller portions and 2) giving a light brush of heavy cream before baking. Thank you for finally making me a believer of scones. )"

"I come from Lithuanian/Polish imigrants. Yes the potatoes have to be grated, but not shredded. For lack of a better term, you want the texture to be granular. The only way that I know how to this other than by hand (with the special old school grater) is to put them through a meat grinder on a fine setting."
