You can make this easy veggie burger recipe in less than 15 minutes. It's full of taste and flavor that will make you scream for more. Why do I call it the best veggie burger recipe ever? Because both vegetarians and carnivores are crazy about it. Ingredients 2 burger buns, 2 Large eggs, 1 Tbsp olive oil, 1 ripe avocado, 80 g Mature Blue Stilton cheese or 2 slices, 2 tomatoes sliced, 1/2 red onion sliced, 1/2 tsp chili flakes, 1 Tbsp honey, 1/2 lime juiced, a handful of rocket leaves. Instructions Heat a pan over medium-high heat. Add a bit of olive oil, then add the burger buns, cut side down and slightly brown them for about 1 minute. Meanwhile, in a small bowl, add the onion slices with honey and lime juice. Mix well to combine and set aside. Remove buns, lower the heat and gently crack the eggs into the pan. (add a bit more oil if necessary) . Season with salt and pepper to your taste, and add a pinch of chili flakes. Cook the eggs to your liking. (I cooked mine until the egg white was set and the yolk runny, about 3 minutes.) To assemble the burgers, first, add rocket leaves to the buns. Then add tomato and avocado slices, blue cheese, eggs and marinated red onion. Finish the burger by adding the other half of the bun on top.

I am an avid carnivore but I like veggies too. What is wrong to eating a complete vegetarian meal once in a while? I would eat this veggie burger. I love avocado and stilton cheese too. The only change I would make is to leave out the egg but substitute it with a large cooked portabello mushroom.
