NotesIf you don’t have celeriac, you can add celery to add flavor to the stock. Aromatics such as rosemary, cloves, parsley stems, and bay leaf would all be a great ideas. They would enhance the flavor of the pork stock. Roasted onions (with the skins) and garlic would also be nice. Since you’re straining the stock, these bits will be removed before serving.

Ingredients

  • 3 pounds bone-in pork shank
  • 1 yellow onion
  • 3 celeriac stalks with leaves
  • 1 cup black-eyed peas
  • 1 cup green beans
  • 1 cup collards
  • 1 cup diced carrots
  • Salt and pepper to taste

Instructions

  1. Wash the shanks. Then sear them.

  2. Cover meat with water and bring to a boil for 5 minutes.

  3. Skim the foam from the stock and strain the stock.

  4. Cook stock, bones, and skin in a pressure cooker on high for 30 minutes.

  5. Let the stock reduce for one hour on the stove and add the vegetables.

  6. Add salt and pepper to taste.
