- 18 oz red potatoes
- 1 tbsp olive oil
- 1 tbsp sunflower oil
- 3 garlic cloves
- 1 tsp harissa
- 1/2 tsp smoked paprika
- 1/4 tsp freshly ground pepper
- 1/4 cup chopped cilantro
- 1 tsp lemon zest
- 2 tbsp lemon juice
Preheat oven to 450 degrees Fahrenheit.
Cut the potatoes into an-inch thick.
Boil the potatoes in salted water for three minutes.
Drain in a colander and let it sit for 5 minutes.
Meanwhile, combine the oils, half teaspoon of harissa, and ground pepper.
Toss the potatoes over the harissa-oil mixture.
Place the tossed potatoes on a lined baking sheet.
Bake for 10 minutes.
While the potatoes are still in the oven, combine minced garlic, half a teaspoon of harissa, chili flakes, and salt.
Stir in the additional sauce into the baked potatoes after 10 minutes.
Return the potatoes to the oven and bake for another 20 minutes.
Remove and transfer the potatoes to a large bowl.
Stir in lemon zest, lemon juice, and chopped cilantro.
Mix well before serving.
