Chocolate Smores Souffle


  • 1 cup whole milk
  • 1 tbsp granulated sugar
  • 1/4 vanilla bean
  • 1 ounce unsalted butter
  • 1/4 cup all purpose flour
  • 2 eachs egg yolks
  • 3 eachs egg whites
  • 2 ounces chocolate chips, or chunks
  • 1/2 cup mini marshmallows
  • 1 ounce graham cracker crumbs
  • 1 tspn Godiva liqueur


Place milk, sugar, vanilla bean in a small pot and bring to simmer. Melt butter in a small sauce pan until it starts to simmer, then add the flour with a wooden spoon to form a paste. Temper the hot milk and roux together and bring to a simmer. Whisk in the egg yolks one at a time off the heat. Chill and reserve. Whip the egg whites to a soft peak. Add flavoring to base and fold together with the egg whites. Place the graham cracker crumbs in a oiled and sugared souffle cup. Pour in the mixture just to the top of the cup and garnish with the extra marshmallows. Bake in a 350 degree F oven for 20 minutes in a water bath. Place a toothpick in the center and remove it clean to check doneness. At service garnish with Godiva Chocolate liqueur.
