They are great options for busy workdays. These smoky bacon baked pork chops are another quick dinner you can wrap up after work. It requires no marinating and very minimum prep work. To make it even faster, cook the bacon beforehand. :) :)"

NotesThis recipe can be easily made for 4 servings by doubling the amount of the ingredients. Instead of using a cast iron skillet, prepare a baking sheet by lining it with aluminum foil for baking the pork chops.

Ingredients

  • 2 (3/4-inch thick) bone-in pork chops (about 1 pound)
  • 1 teaspoon mesquite seasoning
  • 1/2 cup pepper jack cheese, shredded
  • 2 tablespoons green onion, sliced
  • 2 tablespoons cooked bacon pieces
  • 2 tablespoons light mayonnaise
  • 1 teaspoon adobo sauce from chipotle in adobo
  • Chopped green onion for garnishing
  1. Preheat oven to 425°F.

  2. Season pork chops with mesquite seasoning and place in an cast iron skillet.

  3. Combine cheese, onions, bacon, mayonnaise and adobo sauce. Spread cheese mixture evenly over pork chops.

  4. Place on the middle rack of your oven and bake for 8-9 minutes.

  5. Switch to broil and broil for 2-3 minutes or until pork is browned and the internal temperature reaches 145°F.

  6. Garnish with green onions and serve with vegetable slaw.

This looks really delicious. Sometimes pork chops need a little extra flavor... what better way to get that than with some bacon?

This looks amazing! This would definitely fit a low carb or low starch diet. I don't do light anything so full fat mayonnaise will do. I buy my chipotles dried so never have sauce. Do you know of a good substitute? If I can't, I may just by a can to try this dish out.

These sound wonderful and I'm especially intrigued by the delicious-sounding bacon and cheese mixture. We're going to be grilling some burgers in the next day or so, and I think I might well make up some of the cheese mixture for use on them. I will try it on pork chops eventually, but when I read this, I thought immediately about how tasty this would be on grilled burgers.

I do like pork chops. This recipe seems a convenient mid-week meal if you are pressed for time. Bacon goes will with pork. I am keen to try the spicy flavors that are in this recipe as well. I can imagine these pork chops being quite moist cooked this way. The thai vegetable salad looks good too.
