Is there anyone in the entire world who does not enjoy a bowl of really good Chinese food? I think not and this really is GOOD Chinese food so do give it a try! We added some extra fresh garden vegetables simply because they were available. It is a great family meal with all the right flavors that we love in Chinese food.

I like this recipe as the ingredients are mostly the same ones I'd use to prepare chicken chow mein myself. Hoisin sauce is unfamiliar to me. I tend to cook the noodles and chicken

(I accidentally posted the comment mid-sentence) I tend to boil the noodles and chicken individually then stir-fry them together, along with the vegetables and seasonings. I'm curious to try it this way, with the noodles added last and boiled with the other ingredients. Sounds tasty!

I haven't had a good batch of chow mein in quite a long time, so I can't wait to give this one a try. The combination of red bell pepper, carrots, and snow peas makes the dish very colorful and appealing. You could even use cooked ramen noodles or Asian style rice noodles in this dish if you wanted too.

I have been looking for an easy Chicken Chow Mein recipe and this looks perfect! I like to cook my chicken breasts in my pressure cooker whenever I need them for recipes. I like that the author uses Spaghettini noodles and I would add the cabbage, as well. The apricot jam is also a very interesting addition for sweetness!
