  • 1 pound linguini
  • 1 cup butter
  • 1 cup chicken broth
  • Juice and zest of 1 lemon
  • 1 cup freshly grated parmesan cheese
  • 1 tablespoon freshly chopped parsley
  • Salt and pepper to taste
  1. Bring a large pot of salted water to a hard boil.

  2. Add in the linguini and cook for 9 minutes.

  3. Drain the pasta and reserve.

  4. In the same pot melt the butter.

  5. Add in the chicken broth, lemon juice and lemon zest.

  6. Stir in the parmesan cheese.

A delightfully refreshing pasta dish - quick and simple to make and suitable for the whole family. One of the children suggested we add some fresh garlic next time so we will try that. I think it would be quite nice variation but the recipe is really very good as it is. With a fresh salad it was a very pleasant meal.
