You had me at "one pot", and this Easy One-Pot Hamburger Helper recipe is truly that. Even the pasta cooks in the same pot. The flavors are great, brought together with every day ingredients, and the ease and convenience of preparing this dish makes it a terrific weeknight dinner. I like serving it with a little parmesan cheese sprinkled on top (must be an Italian thing) and of course, crispy Italian bread on the side.

There are a ton of recipes out there that call themselves a one pot dish, but there's usually a catch. Sometimes you have to sear and brown meat in a skillet before adding to a slow cooker, or you have to boil pasta in a separate pot and add in at the end. This one really is one pot, since the pasta cooks right in the sauce! Not only does the pasta absorb all of that great flavor, but it's starch thickens the sauce!

This is a great quick and easy recipe. I made this for a busy weekend when we had so many activities, I couldn't stop to think about dinner. Everyone loved this. The instructions were great. I did leave out the red pepper and spinach. I didn't have them on hand, and this was still really good! I will definitely be making this again!
