Cream Cheese Frosting for Carrot Cake
- 8 ounces package cream cheese
- 1 cup icing sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice
Allow the cream cheese to come to room temperature, then cream it with an electric mixer or food processor. Add the icing sugar and beat some more, and add the vanilla and lemon juice and beat until it's all well blended. This should do an 8" square cake. If your cake is bigger you will need to double this recipe.
