Stupidly Simple Pineapple Pie

Finally a fool-proof pie recipe everyone will enjoy. Stupidly Simple Pineapple Pie requires a small number of ingredients and even less effort to make. Crushed pineapple blended with other ingredients makes the creamy filling of this pineapple pie. It can be served cold as a refreshing dessert for the summer months, or simply cool it after baking for a slightly warm slice. Either way, we know you'll keep this fast and easy pie recipe on file.

Substitute 1/2 cup packed brown sugar for 1/2 cup of the white sugar if preferred.

Cooking Time45 min

Ingredients

  • 8 1/2 ounces crushed pineapple
  • 1/3 cup margarine
  • 1 1/2 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 (9-inch) pie crust, unbaked

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Drain pineapple very well, reserving juice for other uses.
     
  3. Cream butter and sugar together until light and fluffy. Add eggs and use a wire whisk to combine thoroughly.
     
  4. Add vanilla extract and drained pineapple; blend.
     
  5. Pour into pie shell and bake for about 45 minutes. Let cool for a few minutes before cutting, or serve cold.
