Ingredients
- 15 fresh or thawed blueberries, plus more for garnish
- 1 teaspoon maple syrup
- 1 sprig rosemary
- 3 ounces (90 ml) chilled lavender tea
- 1 1/2 ounce (45 ml) freshly squeezed orange juice
- 1 ounce (30 ml) verjuice
- Lavender sprigs, for garnish
METHOD
-
Muddle the blueberries in a shaker with the maple syrup until the berries are well mashed and the juices have been released.
-
Add the rosemary to your shaker, and press gently a few times with the muddler to just bruise the leaves slightly.
-
Add the chilled lavender tea, orange juice and verjuice to the shaker with some ice. Shake well.
-
Strain over ice into a short glass, and garnish with some lavender sprigs or blueberries.
TIP
Verjuice (sometimes referred to as ‘verjus’) is an acidic juice made from grapes. You can replace this with lemon juice if you wish. Reduce the quantity by half when substituting with lemon juice, as lemon juice has a stronger flavor.
