Ingredients

  • 2 (3-ounces) boxes of raspberry gelatin
  • 4 ounces cream cheese
  • 3 1/2 cups water, divided
  • 1 (8-ounces) tub whipped topping, divided
  • 6 glass dessert dishes

Instructions

  1. Mix the contents of one of the gelatin boxes with one cup of boiling water and stir to dissolve. Add one cup of cold water and stir.

  2. Divide the gelatin evenly among the dessert dishes, about 3-3.5 ounces per dish. Place in the refrigerator for 2-2.5 hours, enough time for the gelatin to solidify as you will be adding another layer on top.

  3. For the second box of gelatin, add powder to one cup of boiling water and stir to dissolve. Combine the gelatin mixture and the cream cheese in a blender or food processor and pulse to combine.

  4. Add 1/2 cup of cold water, pulse to combine, then add half of the whipping topping. Pulse everything together until smooth and pour on top of the gelatin in the 6 dessert dishes.

  5. Chill in the refrigerator until firm then top off with remaining whipped topping. You can serve as is or garnish with a few sprinkles or even some fresh raspberries!

Layered jello desserts are something I grew up on. I think this one will be sweet to make for my mom and take over to her house and surprise her with this weekend. Do you save this dessert for a special occasion? I like to use a treat like this for times when we need a pick-me-up or for a special time.

In the 1940's Jello had a dessert called Jello Delight that was somewhat similar. It started out with a layer of graham crackers spread with powdered sugar mixed with butter then with another layer of graham crackers. Next came alayer of whipped cream with the jello, cooled then spread over the graham crackers, cooled in the fridge then a last layer of jello with fruit mixed in, cooled and added over the whipped layer, a dollop of whipped cream on top. Mom liked to use strawberry jello with strawberries in the top layer, or cherry jello with fruit cocktail. I have changed the recipe to have lower fat cream cheese mixed with splenda and vanilla or rum flavoring, the next layer of jello I use the jello mixed with sugar free /fat free whipped topping, the jello and fruit for the top.

You could use any flavor Jello that you like. Something red for valentine's day, green for st patrick's, etc...

The Jello flavor looks like it would be black cherry since it is such a dark color. And when it is mixed with cream cheese and whipped topping for the second layer it is pink. So my guess would be black cherry.
