  • 5 garlic cloves peeled
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cumin
  • 1/2 cup sour orange juice (half sweet orange juice and half lime juice)
  • 2 (2-pound) chickens, cut up
  • 1/2 large onion, peeled and sliced
  • 1/2 cup oil to fry


  1. Mash garlic with salt and pepper and spices.
  2. Stir in orange-lime juice and set aside.
  3. Place chicken pieces in single layer in glass dish. Arrange onions over chicken and pour on marinade. Cover with plastic wrap and chill a few hours or overnight.
  4. Drain chicken, discard marinade, and blot chicken dry.
  5. Skillet fry chicken pieces the the hot oil over med heat about 20 minutes each side until golden and cooked through. Serve hot.
