Sassy Sauerkraut Apple Cake

Sauerkraut cake really isn't about the flavor of the cabbage- it's about the moisture the sauerkraut brings to the table. This sassy cake is full of apple flavor, very moist, and particularly delicious served with a cup of tea. It's great as a breakfast cake or as a dessert after a meal.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 cup white sugar
  • 2 tablespoons molasses
  • 4 eggs
  • 1 cup vegetable oil
  • 16 ounces sauerkraut, drained and rinsed
  • 1 apple, peeled, cored and finely chopped
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 325°F.
     
  2. Whisk together flour, baking powder, baking soda, salt, and spices.
     
  3. In a large bowl, combine oil, molasses, and sugar with an electric mixer.
     
  4. Mix in eggs.
     
  5. Blend in dry ingredients.
     
  6. Stir in sauerkraut, apples, and nuts by hand.
     
  7. Pour batter into a greased and floured 9x13-inch pan.
     
  8. Bake at  325°F (165° C) for 35 minutes.
     
  9. Remove from oven, and cool on a wire rack.
