Oatmeal Cake

Ingredients

  • 1 cup old-fashioned oats
  • 1 1/2 cup boiling water
  • 1/2 cup butter
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cup flour
  • 2 tablespoons butter
  • 1/2 cup light brown sugar
  • 1/3 cup evaporated milk
  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts

Instructions

Preheat the oven to 350 degrees. To prepare cake, place the oats in a bowl and pour the water over. Set aside to cool. Cream the butter and sugars together until very light and fluffy. Beat in the eggs, one at a time. Stir in the vanilla, baking soda, salt, cinnamon, and cooled oatmeal mixture. Stir in the flour and turn the mixture into a lightly greased 9 x 13-inch baking pan. Bake 40 minutes, or until done. Mix the topping ingredients together. Spread on a hot cake and return to the oven for 3 minutes. Serve warm.
