No Bake Strawberry Shortcake Cheesecake

Do you need a shortcake recipe that you can make in only a few hours? This No Bake Strawberry Shortcake Cheesecake is a creamy dessert that you can throw together for practically any event! The shortbread is made of crushed vanilla cookies pressed into a pan, a vanilla pudding and whipped cream filling, and finally, an entire layer of fresh strawberries topped with whipped topping and crushed cookies. Waiting for this delicious cake to set is going to be the hardest part, but it will be worth it when you take a bite of it at your next party!

Notes

  • If you want to use fresh whipped cream, go ahead! You'll need at least 2-3 cups of cold heavy whipping cream. Whip it until stiff peaks form, and then substitute it for the whipped topping. 8 ounces of Cool Whip is approximately 4 cups of whipped cream.

  • Also, try using cheesecake or lemon instant pudding. They'd be delicious options in this recipe!

I like this dessert idea. How clever to use Oreos for the crust. This is more of a pudding treat dish. I don't think cheesecake is the same texture. I want to make this soon, while fresh strawberries are still in the store. My family will gobble this dessert up in no time.

I'm not sure why this has cheesecake in the title. The original recipe just refers to it as a Strawberry Shortcake Dessert. It looks super simple to make, and I think it looks very tasty. I agree that it does have a more pudding-like consistency, and though it's recommended to chill for 4 hours, I think sticking in the freezer for at least part of that time would help firm it up.

This looks gooey and delicious but seems to be more of a pudding consistency than actual cheesecake! I didn't know that there is cheesecake-flavored pudding but I would recommend that over the vanilla. As always, feel free to choose whatever fresh you like or that is in season like peaches, blueberries, raspberries, or even some freshly picked apples or pears in the fall!
