Fresh Apple Cake

Ingredients

  • 4 eggs
  • 2 1/2 cups sugar, divided
  • 1 cup cooking oil
  • 2 1/2 teaspoons vanilla
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup orange juice
  • 3 teaspoons cinnamon
  • 4 cups peeled and cored apple slices

Instructions

Preheat oven to 350 degrees. Grease and lightly flour tube pan; set aside. In large bowl, combine eggs, 2 cups sugar, oil and vanilla. In another bowl, combine flour, baking powder, and salt. Add flour mixture to egg mixture alternately with orange juice, mixing well to combine. In small bowl, mix remaining 1/2 cup sugar with cinnamon. Pour half of batter into prepared pan. Arrange 2 cups of apple slices over batter. Sprinkle with half of cinnamon mixture. Repeat with remaining batter, apples, and cinnamon mixture. Bake at 350 degrees for 1-1/2 hours or until cake is golden and cake tester interted in center comes out clean.
