Try Victoria's Slow Cooker Meatballs and treat yourself to some fine Italian cuisine! This simple meatballs recipe would go great over pasta or on its own as an appetizer. They're an easy way to please the whole family.

Ingredients
  • 1 pound extra lean ground beef
  • 1 (25-ounce) jar tomato sauce
  • 2 tablespoons no-salt seasoning
  • 1/4 cup long grain rice
  • 1 small onion
  • 1 large garlic clove
  • 1 egg
  • 2 stalks rosemary
  • salt, to taste
  • pepper, to taste
Instructions
  1. Chop onion and garlic in a chopper. Take big bowl and transfer chopped onion and garlic. Add 1 tablespoon of seasoning, egg, and rice to the bowl and mix together.

  2. Add ground meat and mix well. Season with salt and pepper. Make balls from the mixture.

  3. Put tomato sauce in slow cooker; add same amount of water. Add rosemary and 1 tablespoon of seasoning, salt, and pepper. Mix the sauce.

  4. Add meatballs to the sauce so that they don’t touch each other. Cover meatballs with sauce. Cover with lid and set on high for 4 hours. Serve and enjoy!

It is confusing regarding whether the rice is cooked or not. I would imagine that if it is not cooked, being in the slow cooker, it would most definitely cook but what does that do to the meatballs? Will they retain their shape? This does sound like a great recipe though and I would like to try it. I am thinking that if you used cooked rice it won't ruin the recipe at all?

Am I right in thinking that you use uncooked rice in this recipe? I suppose there is plenty of liquid so it will swell up alright, but I have never tried this before. I am looking forward to experimenting and if this works I will probably have a go with chicken too!

Great-an easy meatball recipe! I will be trying this, but I don't like rosemary, so I will omit that. Does anyone know of another herb or spice I could substitute? Meatballs are usually associated with appetizers, but I could make them as a main course with noodles or mashed potatoes.
