"These Cod and Potato Fritters, known in Spain as buñuelos de bacalao y patata, are what classic Spanish food is all about. We’re talking a light, crispy texture, a ton of great flavors, and all done using simple everyday ingredients. Serve them as a tapas appetizer, next to some marinated olives for a taste of Spain. To make this recipe, I used fresh cod I bought frozen and thawed out. You can use other types of firm white fish if you like. As well as salted cod. Just soak in water for 24 hours and add to the fridge, making sure to change the water every 8 hours."
