Super Easy Slow Cooker Potato Soup

- 12 medium red potatoes, cubed (not peeled)
- 1 tablespoon butter
- 1 large onion, diced
- 2 cloves garlic, minced
- 5 cups water
- 2 tablespoons chicken base
- Salt and pepper
- 1 can cream of potato soup
- 3 slices bacon, cooked and crumbled
- 1 cup heavy cream
- 1 cup Cheddar cheese
- 1 cup sour cream
- 1/4 cup chives
- 1/4 cup Italian parsley, chopped
Sauté the onions and garlic in butter.
In a large slow cooker, add the potatoes, bacon, water, onion mixture, chicken base, soup, and seasoning.
Cook on high for 4 hours or low for 8 hours until the potatoes are tender.
Stir in the heavy cream, parsley, cheese, sour cream, and chives.
