All American Hamburger Soup

Hamburgers are great for summertime dining, but what about the winter? You can still enjoy delicious ground beef flavor when the weather gets colder, just make a batch of this All American Hamburger Soup! With peppers, celery and tomato added to the mix, this simple beef soup is loaded with great flavor and texture you'll love. When it comes to the best ground beef recipes, hamburger soup will always make it to the top of our list.

Cooking Time1 hr 30 min

Ingredients

  • 1 1/2 pound ground beef
  • 1 (16-ounce) can tomatoes, chopped
  • 6 ounces tomato juice
  • 7 cups water
  • 1/2 pound fresh green beans
  • 1 green pepper, diced
  • 1 cup celery, diced
  • 1/2 cup celery greens
  • salt and pepper, to taste
  • 2 tablespoons light soy sauce
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1/2 teaspoon thyme
  • 1/2 cup pearl barley
  • 2 carrots, sliced
  • 1 large potato, diced

Instructions

  1. Brown hamburger, drain and add to pot.
     
  2. Combine all ingredients except the carrot and potato and bring to a boil. Simmer 45 minutes to 1 hour.
     
  3. Add carrots and cook 10 minutes.
     
  4. Add potato and cook 20 minutes.
