Cheesy Broccoli & Chicken Sandwich

Ingredients

  • 10 ounces pkg frozen broccoli with cheese sauce
  • 4 slices bread (may be toasted)
  • 4 teaspoons yellow mustard
  • 4 ounces boneless cooked, thinly sliced, chicken breast
  • 1 tomato, thinly sliced
  • 4 slices bacon, crisply cooked

Instructions

Yield: 4. In a medium saucepan, cook broccoli according to package directions. Meanwhile, spread mustard on one side of bread. Arrange chicken, tomato & bacon on bread. Spoon broccoli with cheese sauce over the top of each sandwich.

This looks interesting. I hadn't thought of using broccoli and cheese for a sandwich before, and I'm curious how the result would taste. I think I would definitely toast the bread just to give it a bit more stability when it's assembled into the sandwich. I'd also experiment with using thicker slices of bread and making them open-face sandwiches. It's a yummy combination anyway, and I'm looking forward to trying these.
