"Chicken Kapama is a Greek dish consisting of chicken thighs braised in a tomato sauce. Traditionally the recipe uses bone-in chicken thighs and is served with either rice, potatoes, or pasta. This version uses boneless skinless chicken thighs for easier eating and is served with penne pasta. The chicken thighs are braised on the stovetop in a tomato puree with garlic, onion, cinnamon, and a touch of crushed red pepper for a little heat then topped with freshly grated Parmesan cheese. "
