- Use room temperature ingredients for the best results.
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/4 teaspoon grated nutmeg
- 1 teaspoon grated lemon peel
- 1/4 cup ground almonds
- 1/2 cup butter or margarine
- 3/4 cup sugar
- 2 eggs
- 1 1/2 cups mashed banana (4 medium bananas)
- Preheat oven to 350 degrees F.
- Grease 9-inch by 5-inch inch loaf pan.
- Sift flour, baking powder, baking soda, salt, ginger, allspice and nutmeg together in bowl.
- Use fresh flour or organic flour if it's in your budget. Over-processed, chemically treated and old flour will not produce quality bread like fresh, organic flour will.
- Don't skip over the sifting process. It's important to incorporate all ingredients as much as possible! Sifting helps.
- Add lemon peel and almonds. Stir until combined. Set aside.
- Beat butter in large mixing bowl until soft and creamy.
- Beat in sugar until light and fluffy.
- Add eggs and beat until thoroughly blended.
- Beat in flour mixture alternately with bananas until mixture is well blended. Pour into prepared pan.
- Mash ripened bananas with a fork.
- Beat in only a handful of flour at one time. Use your whole arm to stir the bowl in a wide, sweeping motion.
- Mix only until combined. DO NOT OVERMIX. There should be lumps. Overmixed dough will produce tough and rubbery bread.
- Bake in center of oven 1 hour to 1 hour 5 minutes, or until toothpick inserted in center comes out clean.
- Breads require a specific oven temperature. Ensure you have preheated your oven properly and, in this case, station the bread in the center of the oven.
- Cool in pan on wire rack 10 minutes. Invert from pan and cool completely on rack.
For variation, try banana-walnut or -pecan bread: Omit almonds. Add 3/4 cup coarsely chopped walnuts or pecans with bananas.
- Fruits can be used fresh or dried or as purees or juices to add complementary flavors to breads. Combinations of fruit can be used to add variety.
- Breads make with baking soda can be left out 15 to 20 minutes at room temperature before baking to improve the texture and flavor of the bread.
- Bake breads quickly after mixing ingredients when using baking soda to improve results. Leavening begins as soon as the wet and dry ingredients meet.
- Use a fresh can of baking powder within 4 months of opening. To test for freshness, place 1 teaspoon of baking powder in a small amount of hot water. Rapid fizzing means it is fresh.
- Oftentimes sweet bread tastes better the next day.
