Ingredients

  • 3 cups grated zucchini
  • 1 cup oil (salad)
  • 1 1/2 cup sugar
  • 3 eggs, beaten
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 1/2 baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon ginger
  • 1 cup chopped nuts
  • 1 cup raisins

Instructions

  1. Combine zucchini, oil, sugar, eggs and vanilla.
     
  2. Sift together flour, baking powder, soda, cinnamon, salt and ginger and blend into zucchini mixture.
     
  3. Beat 4 minutes.
     
  4. Stir in nuts and raisins.
     
  5. Place in greased loaf pan and bake 1 hour at 350 degrees F.

I want to try this recipe it sounds like a good one but in the recipe where all the ingredients are listed when you get down to the Baking Powder its says. 1-1/2 Baking Powder but what is it 1- 1/2 what, teaspoon or tablespoon???? I will be waiting thank you

It does not say how much Baking Powder to use. I would love to try but need the amount so I don't screw it up and have it be a waste. It says 1 -1/2 but 1-1/2 what Tablespoon or Teaspoon?

i have never tried one with ginger in it....yet....lol,,,but, i do want to try this one out... i have several zucchinis from my garden and hope to like this one and my family so that i can make some for the freezer for winter and so on,,,, one other thing,,,is it better for the zucchini to be freshly picked or are they better if you pick them and let them sit out for a few days or so... if any of you know,,,can you please write it down on here please....thanks here goes a few more LBS....lol
