I love cornbread so much and cornbread casserole is a love of mine, as well! I really like the suggestion of adding meat to make this more of a main dish. I also recommend adding some beans, peppers, tomatoes, and beef or chicken to create more of a chili casserole. That would definitely have enough protein, fat, and carbs to be a complete meal!

no it is not. It is very good, we brown some hamburger meat add that as well.

I remember this recipe from the old Jiffy Mix recipe book. I think you can still get them - of course, this recipe is very old and very southern, so it's been passed down in many families and is always very good.

Very easy to make. The ingredients are thing you may already have on hand. Quick fix for a fast meal. Good size recipe. Enough for leftovers. Very good tasting. Will make it again. Something different from potatoes or rice.
