Easy Hashbrown Casserole

If you are looking for an easy dinner tonight, then make this casserole! There are only 4 main ingredients in this hash brown casserole recipe. It also makes a great side dish recipe for a holiday meal or to bring to a potluck. You can easily customize this by adding chicken for dinner or leftover ham! It's so stupidly easy to make that it might just become your new go-to side dish for any occasion.

Preparation Time: 10 min

Cooking Time: 1 hr

  • 4 large baking potatoes, or 1 (20-28 ounce) bag frozen hash browns
  • 1 large onion, diced
  • salt and pepper, to taste
  • 2 pounds colby cheese, low-fat, shredded
  • 1 (10-ounce) can cream of chicken soup, low-fat
  1. Pre-heat oven to 350 degrees F.
  2. Coarsely grate potatoes (or use frozen hash browns).
  3. Mix together potatoes, grated colby cheese, finely diced onion, can of soup, salt and pepper. Place in greased shallow 13 x 9-inch baking dish and spread out evenly. Sprinkle a little of the cheese on top.
  4. If raw potatoes are used, bake 1 hour to 1 hour and 15 minutes. If frozen potatoes are used, bake for 45 minutes or until golden brown.
