Easy Hashbrown Casserole

If you are looking for an easy recipe tonight, then make this unbelievably easy casserole! There are only four main ingredients in this Easy Hashbrown Casserole recipe. Feel free to use frozen hashbrowns as the recipe suggests, or to use shredded baking potatoes. A huge helping of cheese and two delightful onions are added in to create one flavorful casserole.

Your family will love this delicious dish, and you’ll love it because it can be served for breakfast, lunch, or dinner. It also makes a great side dish recipe for a holiday meal, or the perfect bring-along dish to bring to a potluck. You can easily customize this by adding chicken for dinner or leftover ham. It's so stupidly easy to make that it might just become your new go-to side dish for any occasion. The possibilities are endless!

Preparation Time: 10 min

Cooking Time: 1 hr

  • 1 (10-ounce) frozen hash browns, thawed
  • 1 large onion, diced
  • 2 pounds shredded Cheddar cheese
  • 1 (10-ounce) can cream of chicken soup
  • salt and black pepper to taste
  1. Preheat oven to 350 degrees F.
  2. Spray a 9 x13 inch casserole dish with cooking spray.
  3. In a large bowl combine all ingredients until well mixed.
  4. Spoon into prepared casserole dish and bake 45 minutes to 1 hour or until potatoes are tender and top is lightly browned.

You may substitute 4 large baking potatoes, shredded, for the hashbrowns. Increase cooking time to 1 hour and 15 minutes.

I loved everything about this casserole... EXCEPT for the onions. They added a not-so-pleasant crunch, not to mention a not-so-pleasant flavor. I'm so-so on onions normally, but I just couldn't deal with them in this. Otherwise, I loved everything else about this casserole.

If using frozen potatoes, how large a package?

You are reading this recipe correctly. It does in fact call for the correct amount of cheese. You can certainly try adjusting the recipe to use less cheese if desired.

Two Pounds of Cheese sounds like an awfully lot. Should it be two cups? K.Case
