Nothing will warm you up on a cold winter night like a hearty bowl of soup! This recipe is so quick and easy to make! It is relatively healty too. If animal stock isn't your thing, you can easily swap out a flavourful vegetable stock in its place. I highly suggest serving this delicious soup in a nice warm bread bowl. What could be better!?!?! Sometimes when I make brocolli cheddar soup, I will even add in some rice for extra hardiness. So good.

I love broccoli cheese soup! I am happy to see how easy this recipe is. Now that fall is on the way, I am gathering a collection of soup recipes to make on the weekends. I love soup, salad, and a loaf of fresh-baked bread warm out of my bread machine.

My husband usually orders this soup when we eat at Panera, so I am very interested in this recipe! It seems like it would be quite easy to make and a wonderful addition to my book of "go to" recipes for fall and winter here in the great white north! Would also be a good pot luck recipe to share with friends and family.

I was just enjoying an unusually springlike day in Ohio when It snowed the next day. I'll be making this hearty comforting soup today! Looks easy and fast. I'll make a double batch and give my daughter's family some. It'll get some broccoli in the grandkids! lol

This is just like Panera'sexcept more delicious and more healthful! Just keep in mind that this is not vegetarian, since it uses chicken stock, but you could make it vegetarian-friendly by substituting vegetable stock and adding a tablespoon of soy sauce to give it that savory flavor.
