Quick and Creamy Lemon Meringue Pie

Ingredients

  • 1 1/2 cup graham cracker crumbs
  • 1/4 cup Butter
  • 3 tablespoons granulated sugar
  • 1/4 cup egg yolks
  • 14 ounces sweetened condensed milk
  • 1/2 cup lemon juice
  • 1/4 cup egg whites, slightly beaten
  • 1/4 teaspoon cream of tartar
  • 1/3 cup granulated sugar

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl.
     
  3. Press mixture firmly in a 9" pie pan. Bake for ten minutes or until lightly brown.
     
  4. To prepare filling, combine egg yolks, sweetened condensed milk, and lemon juice in a mixing bowl. Mix well. Pour into crust.
     
  5. To prepare meringue, beat egg whites in a mixing bowl until large bubbles form.
     
  6. Beat in cream of tartar and continue beating until soft peaks form.
     
  7. Gradually add sugar, beating until meringue is smooth and glossy and stands in soft peaks. Spread meringue over top pie filling.
     
  8. Bake for 15 minutes, or until meringue is golden brown. Cool completely, then refrigerate until ready to serve.

I wonder why in the ingredients it says use butter but in the instructions it says margarine.

happy easter day this is s good lemon pie

I love lemon too. This sounds really good, but is 15 minutes in the oven enough time to cook the egg yolks without fear of salmonella?
