Sunshine Chicken Salad

No two chicken salad recipes are alike. Sunshine Chicken Salad, for example, is bursting with fruity flavor. Grapes and pineapple are added to the chicken, and everything is coated in a sweet and creamy dressing that makes the whole thing come together. You can use plain yogurt, but pineapple or pina colada yogurt adds a little more sunshine. This refreshing salad makes a terrific lunch and would be a nice addition to a spring or summer potluck. If you want some crunch, add celery and water chestnuts.

Ingredients

  • 1 ounce dry Ranch salad dressing mix
  • 1/2 cup mayonnaise
  • 1/2 cup yogurt (pineapple or pina colada-flavored if desired)
  • 1/4 cup honey
  • 2 cups cooked chicken, cubed
  • 1 (8-ounce) can pineapple chunks, drained
  • 1 and 1/2 cups seedless red grapes
  • 1 (8-ounce) can sliced water chestnuts, drained (optional)
  • 1 cup celery, chopped (optional)
  • 1/2 cup slivered almonds, toasted

Instructions

  1. Combine dressing mix, mayonnaise, yogurt, and honey. Chill at least 30 minutes.
     
  2. Place chicken, pineapple, and grapes in a bowl (add celery and water chestnuts if desired). Toss with dressing. Sprinkle with almonds.

I've been making my chicken salad with grapes for years but never really gave any thought about trying pineapple or yogurt and now I'm wondering why...it sounds amazing. I'll probably try it with plain yogurt since the pineapple is already sweet enough and I'm thinking some red onion would compliment the ingredients perfectly.

We eat a lot of salad during the summer but I normally don't add any fruits. This summer I am going to try this recipe. We love fresh pineapple. I am going to add an apple instead of the celery. My hubby will love this salad.

WhooHOOOO, this is a delicious dish! We added a handful of chopped walnuts which brought a nice crunchy aspect but other than that followed the recipe exactly. The sauce is also really VERY nice indeed with the honey, yoghurt and mayonnaise combining into a smooth tasty dressing. The whole family loved the meal and we will definitely be having it again soon!

Including bits of fruit in potato and chicken salads is a really great idea. I was invited to a German-style BBQ once and there was a potato salad as one of the sides. This potato salad was different because it had bits of apple which gave it a sweet, juicy crunch. It was amazing.

I'm surely making this chicken salad recipe. I love fruit in a salad and nuts. I think you must definitely add in the crunch otherwise it's too soft. I am going to use mango instead of pineapple. I have a mango and I kept thinking I wanted a chicken and mango salad but didn't know how to put it together. Now I know!

It's amazing how well the flavor of chicken can compliment fruits. A time- and money-saving tip is to use canned chicken. It's similar to canned tuna in design and look but is very tasty and perfect for a quick meal. This would be great in a sandwich, on top of a bed of spinach, or on its own!

I agree, no two chicken salad recipes are alike. Looking at the recipe I got excited when I saw grapes and pineapples in the ingredients. Wow. This is so exciting to make. Fruity chicken salad. I always make chicken salad but without the fruits. Who would think that adding fruits would make a lot of difference as the fruits will add color and sweetness to the chicken recipe. From now on, this Sunshine Chicken Salad will be part of our party fare or of our everyday menu at home. I'm sure the kids will like this. Look soooo delicious.
