Broccoli Cheese Chicken Bake

Ingredients

  • 4 1/2 cups Pepperidge Farm® Herb Seasoned Stuffing
  • 2 tablespoons butter, melted
  • 3/4 cup water
  • 1 (10-ounce) package frozen chopped broccoli, thawed
  • 6 skinless, boneless chicken breast halves (about 1 1/2 pounds)
  • paprika, to taste
  • 1 (10-3/4-ounce) can Campbell's® Condensed Broccoli Cheese Soup (Regular or 98% Fat Free)
  • 1/3 cup milk

Instructions

  1. Preheat oven to 400 degrees F.

  2. Crush 1/2 cup stuffing and mix with 1 tablespoon butter in a small bowl. Set the mixture aside.

  3. Stir the water, remaining butter and broccoli in a large bowl. Add the remaining stuffing and mix lightly. Spoon into a 3-quart shallow baking dish. Arrange the chicken over the stuffing and sprinkle with paprika.

  4. Stir the soup and milk in a small bowl. Pour over the chicken. Sprinkle the crushed stuffing mixture over the soup mixture.

  5. Bake for 40 minutes or until the chicken is cooked through.

This Broccoli Cheese Chicken Bake recipe is absolutely wonderful. Chicken, Broccoli, cheese, stuffing, creamy cheese soup, you can not beat the combination of flavors for your family. And, oh how I love "one pot wonders". Just add a mixed green salad and you are good to go. Love the idea of making it and then freezing individual portions for a later date.

I have made this for years and years using Stove Top Stuffing and never thought to put in Cr of Broccoli soup. Fantastic idea. I use the veggie mix of broccoli, cauliflower and carrots for it too. I make the casserole and then freeze in one person meal containers. Awesome, just awesome. I make it a few times a month and always have meals in the freezer of it. Turkey or chicken works.
