Lazy Cabbage Roll Casserole

Don't feel like putting a ton of effort into dinner? Then this Lazy Cabbage Roll Casserole recipe is for you! Try this dish, one of our simplest quick casserole recipes, and you'll be hooked for life! With rice, ground beef and of course cabbage, it's hard to go wrong with an easy dinner recipe like this one.

Serves: 8

Cooking Time: 2 hr

Ingredients
  • 1/2 cup long grain rice
  • 1 tablespoon vegetable oil
  • 1 pound ground beef or a 19 oz can of black beans
  • 1 onion, finely chopped
  • 1 head cabbage, chopped coarsely
  • 3 1/2 cups tomato sauce (can use half salsa)
  • 2 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. Preheat oven to 375 degrees F.
     
  2. Place rice in small saucepan; cover with water and bring to boil. Simmer 5 minutes; drain.
     
  3. Heat oil in Dutch oven or large skillet over medium-high heat; add beef (or beans) and onion and cook until beef is no longer pink and onions are softened. Drain off excess fat.
     
  4. Stir in rice, cabbage, tomato sauce, salsa (if using), water, salt and pepper.
     
  5. Pour into a casserole dish; cover and bake about 1 hour.
     
  6. Stir and add 1/2 cup more water if necessary.
     
  7. Cook 1 hour longer or until cabbage is very tender.
